Cajun Pork

Ingredients
  • 1 1/2 lb pork loin, sliced
  • 3 tbsp flour
  • 1 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 large clove garlic, minced
  • 3 medium onions, sliced
  • 1 1/2 tsp parsley
  • 3 tbsp vegetable oil
  • 14 oz can tomatoes
  • 1 tsp brown sugar
  • 1 tsp dry mustard
  • 1/4 tsp oregano
  • 1/2 cup sliced black olives
  • 6 drops “Franks” hot sauce

Instructions

  1. Fry coated pork (flour, chili powder, salt and pepper). Place in roaster.
  2. Fry garlic, onion and parsley in oil. Place in roaster.
  3. Bring to a boil; tomatoes, sugar, mustard, oregano and hot sauce; pour over meat.
  4. Bake at 350°F for 30 minutes
    Serve with steamed rice.
