Cajun Pork

Ingredients
- 1 1/2 lb pork loin, sliced
- 3 tbsp flour
- 1 1/2 tsp chili powder
- Salt and pepper to taste
- 1 large clove garlic, minced
- 3 medium onions, sliced
- 1 1/2 tsp parsley
- 3 tbsp vegetable oil
- 14 oz can tomatoes
- 1 tsp brown sugar
- 1 tsp dry mustard
- 1/4 tsp oregano
- 1/2 cup sliced black olives
- 6 drops Franks hot sauce
Instructions
- Fry coated pork (flour, chili powder, salt and
pepper). Place in roaster.
- Fry garlic, onion and parsley in oil. Place in
roaster.
- Bring to a boil; tomatoes, sugar, mustard, oregano
and hot sauce; pour over meat.
- Bake at 350°F for 30 minutes
Serve with steamed rice.
