Pork Fillet a la Tony

Ingredients
  • 1 pork fillet
  • 1 pack frozen puff pastry
  • 2 Granny Smith apples
  • Seasoning (paprika)
  • Bottle of cider

Instructions

Soak pork in cider overnight. Remove and dry.

Sear pork in hot oil to seal, remove and cool.

Roll out pastry to an oblong approximately 14" x 8".

Lay pork in centre, slice apples thin and lay on top and side of pork.

Season with paprika and enclose in pastry, use a beaten egg to stick, brush remaining egg over pastry.

Score pastry with sharp knife on top.

Bake at 350° for about 40 minutes.

Slice and serve with sautéed red cabbage.
